Start by making some mashed potatoes ( left over potatoes of any kind will do )
-Chop the potatoes into 3rds, then 3rds again
-Put into a pan of boiling water until slightly soft, check this by stabbing one lightly with a knife
-Drain out the potatoes and put them into a pot. Add a small amount of milk, butter and season to taste
-Mash them to preferred consistency ( Lumpy or smooth)
While the potatoes are boiling, take your preferred meat and dice it into small pieces ( make sure the meat is already cooked ) I found thick smoked bacon worked really well for this dish
-Mix the diced meat and add it to the mash
-Add cheddar to taste ( try to use grated cheddar if possible)
-Add in a VERY small amount of flour/cornflour. Just enough to thicken it a bit
-Make the mash and meat into small thin patties
-Put a small amount of oil into the pan, just enough to cover it in a thin film
-Fry the patties for 2-3 minutes or until they have browned, flipping occasionally. ( More time might be needed depending on the thickness of the patties )
Serve with tomato sauce/relish
Total cooking time: 25-30 minutes
Enjoy!
