Spicy Sun Dried Tomato Cous Cous

a great side dish or light lunch



  • 1. cous cous
  • 2. tomato purée
  • 3. garlic purée
  • 4. sun dried tomatoes
  • 5. red chilli flakes (or you could use chilli powder)
  • 6. a little olive oil (or any vegetable oil)
  • 7. Salt and black pepper (preferably freshly ground


1. place the cous cous in a bowl and cover it with boiling water.

2.Drizzle over a little oil to stop it sticking. Cover with cling film and place in the microwave for 2 minutes.

3. When the microwave beeps remove the bowl and shake it hard to separate the cous cous as it will have clumped together.

4. add a little more oil as well as 2 tablespoons of tomato purée, half a teaspoon of garlic purée, 5 finely chopped sun dried tomatoes, salt and pepper, parsley and about a quarter of a teaspoon of chilli flakes (less if you like it mild, more if you like it hot).

5. fork the other ingredients through the cous cous.

6. Serve and enjoy!
