Step 1:

  • Chop the onion. Put 2 table spoons of olive oil in a pan and start cooking the chopped onion. Add the tomato paste and stir constantly for 2 or 3 minutes. Add some water and stir.

  • dice the tomatoes and add them to the pan. Add salt and pepper to your liking. You need to stir from time to time and add water in order for your mixture not to stick to the pan.

  • chop the pepper. When the tomato mix is almost smooth, add the pepper and let cook for 3 or 4 minutes (you just need the pepper to be cooked).

  • finally add the egg(s), season it/them and cover your pan. Your ratatouille is ready when the egg(s) is/are done.

  • note: if you have more time you can add diced potatoes and courgettes to your ratatouille.
