Step 2:
Chop up Peppers, chunky is nice. Get rid of the seeds and stalky bits Step 3:
Chop and slice onions and mushrooms Step 4:
Slice courgettes – throw away the bits at the ends Step 6:
Place in bowl and put to one side Step 7:
Put pan on low/ medium heat Step 8:
Add splash of olive oil about a table spoon of butter. Olive oil stops the butter burning – keep on low / med heat Step 9:
Add all the veg and stir to avoid burning Step 10:
When the cougettes and onions are starting to look clear – after maybe 5 – 10 mins, add the tinned tomatoes. You can chop the tomoatoes in the tin first before adding to the veg. Turn heat a bit lower and the tomatoes will ‘reduce’and make a thicker sauce. You can add water if it is becoming too thick. Add extra seasoning if you like – ie black pepper, chopped garlic, mixed herbs Step 11:
Will probably take about 30 mins but do a taste test to see if it tastes OK Step 13:
