Step 1:

  • Wash veg
  • Step 2:

  • Chop up Peppers, chunky is nice. Get rid of the seeds and stalky bits
  • Step 3:

  • Chop and slice onions and mushrooms
  • Step 4:

  • Slice courgettes – throw away the bits at the ends
  • Step 5:

  • Step 6:

  • Place in bowl and put to one side
  • Step 7:

  • Put pan on low/ medium heat
  • Step 8:

  • Add splash of olive oil about a table spoon of butter. Olive oil stops the butter burning – keep on low / med heat
  • Step 9:

  • Add all the veg and stir to avoid burning
  • Step 10:

  • When the cougettes and onions are starting to look clear – after maybe 5 – 10 mins, add the tinned tomatoes. You can chop the tomoatoes in the tin first before adding to the veg. Turn heat a bit lower and the tomatoes will ‘reduce’and make a thicker sauce. You can add water if it is becoming too thick. Add extra seasoning if you like – ie black pepper, chopped garlic, mixed herbs
  • Step 11:

  • Will probably take about 30 mins but do a taste test to see if it tastes OK

  • Serve with garlic bread

  • Also as a suggestion eat with plain cooked pasta
