This delectable viral olive oil cake has captured many’s hearts and taste buds with its perfect balance of rich olive oil and bright citrus. Today, I will share my twist, slightly altered from that of Executive Pastry Chef Geoffrey Koo so that you can recreate this restaurant-worthy dish in the comfort of your own home.

Preheat your oven to 350°F. Spray a 10” round cake pan with non-stick cooking spray. Line the bottom of the pan with parchment paper to prevent sticking.

First, let’s prepare our wet ingredients. In a large bowl, whisk the eggs until well beaten. Add the granulated sugar and whisk until the mixture is pale and slightly thickened. Gradually drizzle in the extra-virgin olive oil while continuing to whisk. Pour in the milk, followed by the freshly squeezed lemon juice and the zest. Mix until well combined.

In a separate bowl, sift together the all-purpose flour, baking soda, baking powder, and salt. This step ensures that the dry ingredients are well incorporated and free of lumps.



Gradually add the sifted dry ingredients to the bowl of wet ingredients. Use a whisk to gently mix the dry and wet ingredients together. Be careful not to overmix – the goal is to combine just until the batter is smooth and no streaks of flour remain.


Pour the cake batter into the prepared round cake pan, smoothing the top with a spatula to ensure even baking.


Place the pan in the preheated oven and bake at 350°F for approximately one hour.



While the cake bakes, prepare the glaze. In a bowl, combine the powdered sugar, fresh lemon juice, and lemon zest.



Whisk the mixture vigorously until smooth and well combined. If the glaze seems too thick, you can add a little more lemon juice to achieve your desired consistency.


Once the cake is baked, remove it from the oven and allow it to cool in the pan for about 10-15 minutes.

STEP 10:

Gently run a knife around the edges of the cake to loosen it from the sides of the pan. Invert the cake onto a wire rack, removing the parchment paper from the bottom.
