Today, I will share my twist, slightly altered from that of Executive Pastry Chef Geoffrey Koo so that you can recreate this restaurant-worthy dish in the comfort of your own home.
Preheat your oven to 350°F. Spray a 10” round cake pan with non-stick cooking spray. Line the bottom of the pan with parchment paper to prevent sticking.
First, let’s prepare our wet ingredients. In a large bowl, whisk the eggs until well beaten. Add the granulated sugar and whisk until the mixture is pale and slightly thickened. Gradually drizzle in the extra-virgin olive oil while continuing to whisk. Pour in the milk, followed by the freshly squeezed lemon juice and the zest. Mix until well combined.
In a separate bowl, sift together the all-purpose flour, baking soda, baking powder, and salt. This step ensures that the dry ingredients are well incorporated and free of lumps.
