Red Lentil And Bacon Soup

The best soup – serve with crusty bread for a great meal

Ingredients
- 1 large onion or 2 small
- 4 carrots
- 1/2 turnip
- 2-3 potatoes
- 8 rashers of bacon
- 3 vegetable stock cubes
- 2 ham stock cubes
- salt/pepper
- 300g lentils
Instructions
Bring 2.5 litres of water to the boil in a large pot
chop up all the veg except 2 carrots into small cubes
grate the remaining 2 carrots
add veg and stock cubes to water
cut bacon into small chunks and add to pot
rinse lentils in cold water and add to pot
simmer slowly for 1hr, removing the scum as you go.
add salt/pepper to taste.
for best results leave soup for at least 4hrs before serving for flavour to intensify.
