Step 1:
Bring 2.5 litres of water to the boil in a large pot Step 2:
chop up all the veg except 2 carrots into small cubes Step 3:
grate the remaining 2 carrots Step 4:
add veg and stock cubes to water Step 5:
cut bacon into small chunks and add to pot Step 6:
rinse lentils in cold water and add to pot Step 7:
simmer slowly for 1hr, removing the scum as you go. Step 8:
add salt/pepper to taste. Step 10:
for best results leave soup for at least 4hrs before serving for flavour to intensify.
