Step 1:

  • Put oil in a bowl and cook for 1 and a half mins, add onion and sliced pepper and cook for 6 min. add tomato and stir in the stock, herbs, sugar, tomato puree and lemon juice.
  • Step 2:

  • Cook for further 6 mins, then taste and adjust the seasoning.
  • Step 3:

  • Remove few slices of pepper from bowl and puree the soup return the reserved pepper slices to the soup and serve topped with a whirl of yoghurt.
  • Step 4:

  • SERVE HOT, ENJOY!
