Put oil in a bowl and cook for 1 and a half mins, add onion and sliced pepper and cook for 6 min. add tomato and stir in the stock, herbs, sugar, tomato puree and lemon juice.
Step 2:
Cook for further 6 mins, then taste and adjust the seasoning.
Step 3:
Remove few slices of pepper from bowl and puree the soup return the reserved pepper slices to the soup and serve topped with a whirl of yoghurt.
