Red Wine Pasta

A simple and delicious way to use the last of your bottle of wine

Ingredients
- ? pasta type of preference
- ? can of chopped tomatoes
- ? can of lentils
- ? large handful of spinach
- ? 2 dessert spoons of tomato paste
- ? olive oil
- ? teaspoon of crushed garlic
- ? 4 mushrooms (portobello or button) sliced or cubed
- ? 1 small brown onion roughly chopped
- ? 1 table spoon mixed herbs
- ? ½-1 cup red wine
- ? ¼ cup white wine (optional)
Instructions
1. boil water in a pot and add in pasta. Cook until al dente
2. while pasta is cooking, in a separate pot cook onion, garlic and mushroom in olive oil until onion is clear and mushroom is cooked through and soft
3. mix in lentils and heat through for 1-2 minutes
4. add in tomatoes and tomato paste, mix all together
5. mix in wine(s) and herbs, leave to simmer for four-five minutes mixing occasionally
6. drain pasta and add to other pot
7. add in spinach, mix and cook until spinach has turned soft and dark green
