Home › Vegetarian › Red Wine Pasta Red Wine Pasta RECIPE BY Guest Contributor A simple and delicious way to use the last of your bottle of wine PREP 0 min COOK 0 min TOTAL 0 min YIELD 0 JUMP TO RECIPE SHARE Share on Facebook Share on Flipboard Share on Pinterest Share via Email Ingredients? pasta type of preference? can of chopped tomatoes? can of lentils? large handful of spinach? 2 dessert spoons of tomato paste? olive oil? teaspoon of crushed garlic? 4 mushrooms (portobello or button) sliced or cubed? 1 small brown onion roughly chopped? 1 table spoon mixed herbs? ½-1 cup red wine? ¼ cup white wine (optional)Instructions Step 1: 1. boil water in a pot and add in pasta. Cook until al dente Step 2: 2. while pasta is cooking, in a separate pot cook onion, garlic and mushroom in olive oil until onion is clear and mushroom is cooked through and soft Step 3: 3. mix in lentils and heat through for 1-2 minutes Step 4: 4. add in tomatoes and tomato paste, mix all together Step 5: 5. mix in wine(s) and herbs, leave to simmer for four-five minutes mixing occasionally Step 6: 6. drain pasta and add to other pot Step 7: 7. add in spinach, mix and cook until spinach has turned soft and dark green Share: Share on Facebook Share on Flipboard Share on Pinterest Share via Email
