Step 1:

  • Put chocolater and water in a bowl.
  • Step 2:

  • Microwave on defrost for 1-2 mis until mixture melts.Remove bowl and add butter.
  • Step 3:

  • Stir until melted and cool for 5 mins. Stir in egg yolks one at a time.
  • Step 4:

  • Leave to cool for 15 mins.
  • Step 5:

  • Meanwhile whip the cream and sugar together until soft peaks form.Reserve one third and fold the remaining whipped cream into chocolate mixture.
  • Step 6:

  • Divide into individual serving bowl. Chill until set. Decorate with reserved cream and chocolate flakes.
  • Step 7:

  • P.S. For mousse with a hint of mocha, melt the chocolate with strong black coffee instead of water.
