Roasted cheesy potatoes

Easy to makes and works as a side or main part of the meal

Ingredients
- 8-10 new potatoes or 3-6 russet/similar potatoes
- 1/3 cup vegetable or coconut oil
- 3 finely diced garlic cloves
- salt & pepper to taste
- Spices and herbs of choice (I used turmeric – italian herb mix – chopped parsley)
- ~3/4 cup sharp/strong white cheese of your choice
Instructions
Preheat oven to 400 F. Cut potatoes into bite-sized pieces–the same size you might use for home fries.
In a large bowl, toss together potatoes, oil, garlic, salt, pepper, spices and herbs until potatoes are thoroughly coated in everything.
Cover a cookie sheet with parchment. Pour the potatoes out on the tray and spread out evenly. Cover potatoes evenly with the cheese–it’s best if the tops are all covered and some cheese gets in the cracks between potato pieces.
Put tray in oven and roast potatoes for about 40 minutes. The cheese should be crispy and bubbling and you can test the potatoes’ done-ness by sticking a toothpick through a few of them and making sure it slides through like butter.
