Instructions

Step 1:

  • Preheat your oven to 400 degrees
  • Step 2:

  • Put a pan of water on the stove and boil while preparing ingredients
  • Step 3:

  • Place all the veggies and 4 peeled garlic cloves in a large mixing bowl
  • Step 4:

  • Drizzle with olive oil and add about a teaspoon of rosemary sprigs and some salt and pepper
  • Step 5:

  • Using your hands mix the veggies until covered by the oil
  • Step 6:

  • Place all the veg in a foil lined dish
  • Step 7:

  • Cut off fatty parts of your chicken breasts
  • Step 8:

  • Cut a slit in the breast and stuff a garlic clove in each breast
  • Step 9:

  • Place the chicken on top of veg
  • Step 10:

  • Drizzle with some olive oil and sprinkle with some more rosemary sprigs and ground black peppercorns
  • Step 11:

  • Put in the oven for about 35mins
  • Step 12:

  • Halfway through, baste the chicken in the veggies and sauce
  • Step 13:

  • Place rice in boiling water for 10 minutes
  • Step 14:

  • Remove veg and chicken from the oven
  • Step 15:

  • Serve the rice, chicken, and veg together and enjoy
