Roasted Tomato Salad
Step 1: Plunge the tomatoes into boiling water, leave for a minute. When cool enough to handle remove the skin.
Step 2: slice tomatoes in half and lay on a baking tray.
Step 3: slice some garlic and lay on top of each tomato along with a basil leaf.
Step 4: pour a little oil over each tomato
Step 5: put in the oven at 200 degrees for about an hour. The sides will be getting blackened.
Step 6: take out of the oven and leave to cool a little. Mix some balsamic and olive oil (equal parts) together and pour over the tomatoes. Season.
Step 7: serve either warm with crusty french bread or cold as a salad dish.
