Step 1:

  • Plunge the tomatoes into boiling water, leave for a minute. When cool enough to handle remove the skin.
  • Step 2:

  • slice tomatoes in half and lay on a baking tray.
  • Step 3:

  • slice some garlic and lay on top of each tomato along with a basil leaf.
  • Step 4:

  • pour a little oil over each tomato
  • Step 5:

  • put in the oven at 200 degrees for about an hour. The sides will be getting blackened.
  • Step 6:

  • take out of the oven and leave to cool a little. Mix some balsamic and olive oil (equal parts) together and pour over the tomatoes. Season.
  • Step 7:

  • serve either warm with crusty french bread or cold as a salad dish.
