Rose Cordial
A sweet, floral cordial

STEP 1:
Carefully chop up the rose petals into small pieces – they should feel a little sticky around the edges.
STEP 2:
Place the rose petals into a large pan.
STEP 3:
Pour in the water.
STEP 4:
Add the caster sugar, and stir until the sugar has mostly dissolved.
STEP 5:
Turn your hob on to an orange flame (a low setting).
STEP 6:
Place the pan onto the hob.
STEP 7:
Gently stir the mix.
STEP 8:
After a couple of minutes (or when the mixture is just starting to warm), pour in the honey.
STEP 9:
Continue stirring.
STEP 10:
After about 10 minutes, turn up the temperature up to blue flame (highest setting).
STEP 11:
Continue stirring, but a little gentler.
STEP 12:
Just before the mix has boiled, remove from the hob.
STEP 13:
Turn the hob off.
STEP 14:
Carry on stirring the mix for several minutes.
STEP 15:
Once the mix has cooled, take a look at it. It should be almost clear, with a golden tint and the rose leaves should be broken down.
STEP 16:
Pour the cooled cordial into a bottle, or some glasses.
STEP 17:
Drink within 1 week.
