Step 1:

  • Carefully chop up the rose petals into small pieces – they should feel a little sticky around the edges.
  • Step 2:

  • Place the rose petals into a large pan.
  • Step 3:

  • Pour in the water.
  • Step 4:

  • Add the caster sugar, and stir until the sugar has mostly dissolved.
  • Step 5:

  • Turn your hob on to an orange flame (a low setting).
  • Step 6:

  • Place the pan onto the hob.
  • Step 7:

  • Gently stir the mix.
  • Step 8:

  • After a couple of minutes (or when the mixture is just starting to warm), pour in the honey.
  • Step 9:

  • Continue stirring.
  • Step 10:

  • After about 10 minutes, turn up the temperature up to blue flame (highest setting).
  • Step 11:

  • Continue stirring, but a little gentler.
  • Step 12:

  • Just before the mix has boiled, remove from the hob.
  • Step 13:

  • Turn the hob off.
  • Step 14:

  • Carry on stirring the mix for several minutes.
  • Step 15:

  • Once the mix has cooled, take a look at it. It should be almost clear, with a golden tint and the rose leaves should be broken down.
  • Step 16:

  • Pour the cooled cordial into a bottle, or some glasses.
  • Step 17:

  • Drink within 1 week.
