Rumbledethumps.

It’s a scottish variant of colcannon, bubble and squeak and the like.

Ingredients

  • (feeds a family of 5)
  • 600g potatoes
  • 400g turnip
  • however much savoy cabbage looks right (the recipe i tried had way too much cabbage so i halved it.)
  • about 75g butter
  • splash of milk
  • salt and pepper (or seasoning of choice, i feel seasoning is all to do with preference.)
  • grated mature cheddar

Instructions

  1. Pre heat oven to gas mark 4/5

  2. 1. Cut the potatoes in halves/big chunks and the swede into little chunks.

  3. 2. Boil them until nice and soft (it may take anywhere between 15 minutes and half an hour, just keep checking.) i boiled them in separate pans.

  4. 3. Once boiled, drain the potatoes and turnips and keep them in the colander so they drain thoroughly.

  5. 4. Whilst potatoes and turnip drain, melt half the butter into a pan and cook cabbage in the butter until softened to your taste.

  6. 5. Mash all vegetables with the other half of butter, seasoning and a splash of milk if you like it soft.

  7. 6. Spread out onto oven proof dish, top with grated cheese and cover with foil.

  8. 7. Bake until thoroughly heated (roughly half an hour) then remove foil and let cheese melt and brown. The cheese step could be sped up by popping it under the grill for a few minutes.

  9. enjoy along side your favourite main, i like it with sausages. Could also be enjoyed on its own with a good coating of gravy, mmmm!
