Salmon Pesto Pasta

Step 1:

  • Smother the salmon steak in the pesto and season with salt and pepper and drizzle a little olive oil over it if necessary

  • Wrap in tin foil and bake in the oven for 20 minutes at a high heat

  • Meanwhile roast the pine nuts in a frying pan until they are slightly browned but do not overcook or you will lose all the wonderful oils they contain!!!

  • Put the pine nuts to the side

  • Cook the pasta and mix in the salmon which should fall apart nicely into flakes if cooked properly, the creme fraiche, a dash of extra pesto if needed and the pine nuts! VOILA- a simple but delicious dish. 🙂
