Step 1: Smother the salmon steak in the pesto and season with salt and pepper and drizzle a little olive oil over it if necessary
Step 3: Wrap in tin foil and bake in the oven for 20 minutes at a high heat
Step 5: Meanwhile roast the pine nuts in a frying pan until they are slightly browned but do not overcook or you will lose all the wonderful oils they contain!!!
Step 7: Put the pine nuts to the side
Step 9: Cook the pasta and mix in the salmon which should fall apart nicely into flakes if cooked properly, the creme fraiche, a dash of extra pesto if needed and the pine nuts! VOILA- a simple but delicious dish. 🙂
Step 11: *** if red pesto is used, add some chopped sundried tomatoes for a nice kick
