Salmon fillets oven poached with chilli and lime

Ingredients

  • Salmon Fillets (one each) – look for deals especially on a sunday afternoon.
  • Juice of 1 lime
  • One large red chilli deseeded and chopped
  • Salt & Pepper

Instructions

  1. Place the fillet(s) on a sheet of tin foil. Pour on the lemon juice, scatter the chilli, salt and pepper. Wrap in the foil and cook for 14-16 minutes on gas mark 6 at the top of the oven. Serve with salad and new potatoes. You cant go wrong.
