Sausage and peppers are a tried and true food combination, but the addition of cilantro and balsamic really take this sausage and pepper 20-minute pasta to the next level. The cilantro brings a freshness to the meal while the balsamic’s slight sweetness compliments the rest beautifully. I’ve been loving this Colavita Balsamic Vinegar of Modena recently.

This sausage and pepper 20-minute pasta is also very well-balanced. There are great nutrients in the peppers and onions, protein in the sausage, and carbs in the pasta. I loved eating this dinner in college before a big test or a study session. It always made me feel really good and ready to focus. The carbs from the pasta make studying a breeze and all the ingredients combined help me to feel full for longer so I can stay at the library for as long as I need.

Sausage and pepper 20-minute pasta will always be one of my favorite easy meals. Everyone who has tried it has loved it and when I share the recipe they can’t believe how simple it is. This dish is also very college-budget friendly. Sausage is one of the more affordable meats and onions and peppers can be very cheap. In college, it’s important to eat nourishing meals that are helping your brain, but it is also important to keep them low-cost. This sausage and pepper 20-minute pasta dinner achieves both of those things and is delicious.

The only downside to this easy weeknight meal is that there will never be leftovers. Anytime a pot of this pasta was placed on the kitchen table it would be devoured in a few short minutes. My roommates would return for 2nd and 3rd helpings regularly- really it’s that good!

This sausage and pepper pasta is a must-try. So often with easy recipes, there is a lack of flavor, but I can assure you there are no such problems with this pasta. The peppers are juicy and refreshing and the cilantro adds a nice touch of freshness to the pasta, not to mention the delightful punchiness of the balsamic vinegar. Next time you are in a rush and looking for an easy delicious meal give this sausage and pepper 20-minute pasta a go!
