Step 1:
Boil a pan of water (enough to cover however much pasta you want – don’t use too much pasta otherwise there’ll not be enough sauce) and cook your pasta while you prepare everything else. Step 3:
cut the sausages into chunks (not too big) and fry them until browned. Step 5:
add the onion and peppers (plus garlic and any other veg, if you’re using it) to the pan and cook until they are starting to soften. Step 7:
pour in the tin of chopped tomatoes and leave to cook for 5 minutes. Step 9:
add your mushrooms. Season to taste with mixed herbs (and chilli, if you’re using it). Step 11:
drain your pasta and mix your it with your sauce. If your sauce isn’t covering all of the pasta, (or if you’d like it a bit more tomatoey) add some passata until there’s enough. Step 13:
leave it for a few minutes, until your extra passata heats up, then serve!
