When it comes to making amazing fritters, chickpeas are surprisingly robust. Too often, you can make fritters and they’ll split during the fry and absorb oil. This results in a soggy and often inedible fritter. However, when using chickpeas, they’re fairly dense and don’t absorb the oil even if they do split. So, even if the cooking goes a little wrong, they still taste great.
The process in this recipe is simple. Blend the chickpeas with the pantry-friendly ingredients, coat with a little flour, and fry. The end result is a savory, flavorful snack that’s crisp on the outside and soft in the center.

Chickpea Fritters Ingredients
- 1 can of chickpeas, drained and rinsed
- 1/4 cup of chopped fresh parsley
- 1/4 cup of chopped onion
- 2 cloves of garlic, minced
- 1 tsp of cumin
- 1/2 tsp of salt
- 1/4 tsp of black pepper
- 1/4 cup of all-purpose flour
- 2 tbsp of olive oil
- 1/4 cup of water
Chickpea Fritters Instructions
- Drain and rinse the chickpeas well to remove any extra liquid and salt.
- Add the chickpeas, parsley, onion, garlic, cumin, salt, and black pepper to a food processor. Blend until the mixture forms a chunky paste. A few small pieces of chickpea can remain.
- Spoon the mixture into a mixing bowl. Stir in the flour and water until everything is combined. If the mixture feels too sticky to shape, add a little more flour.
- Pour the olive oil into a frying pan and heat it over medium-high heat. To check if the oil is hot enough, drop in a small bit of the mixture. If it sizzles, the pan is ready.
- Scoop about 2 tablespoons of the chickpea mixture and shape it into a small patty. Gently place it into the hot pan. Continue with the remaining mixture, working in batches so the pan does not get crowded.
- Fry the patties for 4 minutes on each side, until they are golden brown and crisp. Lower the heat if needed so they cook evenly without burning.
- Transfer the cooked fritters to a plate lined with paper towels to absorb any extra oil.
- Serve them warm with your favorite dip, such as tahini sauce or a yogurt-based dip.
