savory curried rice

a quick and tasty option for lunch or a side dish

Ingredients
- basmati rice
- chicken stock cubes
- frozen peas
- korma curry paste
Instructions
1. place a small amount of rice in a microwavable bowl (the rice will expand to about twice the size so don’t use to much)
2. add 2 chicken stock cubes to some boiling water and stir in thoroughly.
3. Pour the stock over the rice so that it just covers it (you can always add more later if it dries out)
4. add a teaspoon of korma paste (or a hotter curry paste if you prefer) to the rice and stir.
5. place in the microwave for about 10 minutes depending on the amount of rice.
6. make sure to stir the rice after 5 minutes.
7. finally stir in the frozen peas and return to the microwave for a further 2 minutes, adding a little water so that the rice doesn’t dry out.
8. Serve and enjoy!
