Step 1:

  • 1. in a pan, pre-cook potato with oil until soft centred
  • Step 2:

  • 2. in a bowl, whisk milk, 2 tbsp. Oil and egg
  • Step 3:

  • 3. add in flour, sugar, baking powder and salt
  • Step 4:

  • 4. when thoroughly mixed together, add in potato and zucchini
  • Step 5:

  • 5. sprinkle salt and pepper to taste
  • Step 6:

  • 6. in oil or butter, fry 3 tbsp. Of mixture in a pan over medium heat
  • Step 7:

  • 7. cook until pancake surface bubbles and some have burst, then carefully flip and cook for another 1-2 minutes
  • Step 8:

  • 8. repeat cooking for each pancake until all mixture is used
  • Step 9:

  • Step 10:

  • can be eaten alone or served with greek yoghurt, mint sauce, chutney or sour cream
