Ingredients

  • -125g self raising flour
  • -125g sugar
  • -125g softened butter
  • – 2 eggs
  • – ginger (optional)
  • for frosting
  • -1-2 teaspoons of butter
  • -100g icing sugar
  • – 1 teaspoon of milk
  • – 1 tablespoon sugar (thin)
  • – ginger

Instructions

  1. Preheat the oven to 180c degrees and line a 12 hole muffin cake tray with paper cases.

  2. step one; sift the sugar into the bowl. And add butter. Cream them together.

  3. step two; sift in the flour. Mix gently.

  4. step three; add ginger.

  5. step four; separate the white from the yolks with the eggs. Put the yolks in the bowl and the white in a separate bowl. Beat the whites until fluffy. Add to mixture and fold them in.

  6. step 5; spoon the mixture evenly into the cases and then tap the tray on the table to re;ease air bubbles. Place in the oven for 10-15 minutes.

  7. step 6;leave them to cool before putting on frosting.

  8. frosting;

  9. with an electric mixer beat the sugar, butter and the icing sugar in the bowl. Add in ginger and milk. Spread or pipe on to cakes.
