Step 1: Preheat the oven to 180c degrees and line a 12 hole muffin cake tray with paper cases.
Step 2: step one; sift the sugar into the bowl. And add butter. Cream them together.
Step 3: step two; sift in the flour. Mix gently.
Step 4: step three; add ginger.
Step 5: step four; separate the white from the yolks with the eggs. Put the yolks in the bowl and the white in a separate bowl. Beat the whites until fluffy. Add to mixture and fold them in.
Step 6: step 5; spoon the mixture evenly into the cases and then tap the tray on the table to re;ease air bubbles. Place in the oven for 10-15 minutes.
Step 7: step 6;leave them to cool before putting on frosting.
Step 9: with an electric mixer beat the sugar, butter and the icing sugar in the bowl. Add in ginger and milk. Spread or pipe on to cakes.
