Step 1:

  • Get a large pan of salted water on the boil, and heat a frying pan.
  • Step 2:

  • Cut bacon into bite size pieces (using scissors is easiest), and gently fry in oil.
  • Step 3:

  • Meanwhile scoop out inside of tomotes and cut into chunks.
  • Step 4:

  • Do the same with the peppers, and deeseed the chilli and chop finely.
  • Step 5:

  • Add peppers, tomatoes, tomato puree and chilli to bacon and fry gently. Season with salt and pepper, add parsley.
  • Step 6:

  • Add tagliatelle to boiling water and cook for around 7 minutes, until al dente. Add about a third of a cupful of pasta water to frying pan.
  • Step 7:

  • When pasta is cooked drain and mix in pesto if using.
  • Step 8:

  • Add pasta to ingredients in frying pan and mix well.
  • Step 9:

  • Put pasta onto plate and drizzle some olive oil over top. Season again with tiny bit of pepper and some more fresh parsley.
  • Step 10:

  • Serve and enjoy!
