Step 1:
Get a large pan of salted water on the boil, and heat a frying pan. Step 2:
Cut bacon into bite size pieces (using scissors is easiest), and gently fry in oil. Step 3:
Meanwhile scoop out inside of tomotes and cut into chunks. Step 4:
Do the same with the peppers, and deeseed the chilli and chop finely. Step 5:
Add peppers, tomatoes, tomato puree and chilli to bacon and fry gently. Season with salt and pepper, add parsley. Step 6:
Add tagliatelle to boiling water and cook for around 7 minutes, until al dente. Add about a third of a cupful of pasta water to frying pan. Step 7:
When pasta is cooked drain and mix in pesto if using. Step 8:
Add pasta to ingredients in frying pan and mix well. Step 9:
Put pasta onto plate and drizzle some olive oil over top. Season again with tiny bit of pepper and some more fresh parsley. Step 10:
Serve and enjoy!
