simple pepper and bacon pasta

yummy tagliatelle with pesto, bacon and peppers
Difficulty Level: easy
Ingredients
- 100g tagliatelle (about 4 bunches of it)
- Olive oil
- 3 rashers of bacon
- 4 fresh tomatoes
- half a red and green pepper
- half a red chilli
- red pesto (optional)
- tomato puree
- fresh parsley chopped finely
- (if cooking for 2 just double the ingredients)
Instructions
Get a large pan of salted water on the boil, and heat a frying pan.
Cut bacon into bite size pieces (using scissors is easiest), and gently fry in oil.
Meanwhile scoop out inside of tomotes and cut into chunks.
Do the same with the peppers, and deeseed the chilli and chop finely.
Add peppers, tomatoes, tomato puree and chilli to bacon and fry gently. Season with salt and pepper, add parsley.
Add tagliatelle to boiling water and cook for around 7 minutes, until al dente. Add about a third of a cupful of pasta water to frying pan.
When pasta is cooked drain and mix in pesto if using.
Add pasta to ingredients in frying pan and mix well.
Put pasta onto plate and drizzle some olive oil over top. Season again with tiny bit of pepper and some more fresh parsley.
Serve and enjoy!
