When it comes to dessert, one of the best is peach cobbler, especially with ice cream. This recipe uses a couple of cheat steps. We use store-bought cake mix and ice cream to keep things super simple.

Regardless of those corners cut, this recipe is cooked slowly so the peaches cook down and become syrupy and tender. The topping turns golden and soft. It’s a classic peach cobbler without the oven bake, and we think far less mess.

Peach Cobbler Recipe Ingredients

  • 8 large ripe peaches, peeled and sliced
  • 3/4 cup of granulated sugar
  • 1/3 cup of chopped crystallized ginger, optional
  • 1 box of white cake mix, 14.25 ounces
  • 3/4 cup of old-fashioned oats
  • 1/2 cup of unsalted butter, melted
  • 1/4 cup of ginger ale
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of kosher salt
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of ground cinnamon, for topping
  • 4 cups of vanilla ice cream, optional, for serving

Peach Cobbler Recipe Instructions

  1. Lightly grease a 6-quart slow cooker with cooking spray.
  2. Add the sliced peaches, sugar, and optional crystallized ginger to the slow cooker. Stir until the peaches are coated.
  3. In a large bowl, mix the white cake mix, oats, melted butter, ginger ale, nutmeg, salt, and vanilla extract until a thick batter forms.
  4. Spoon the batter over the peaches. Spread it gently, but do not fully mix it into the fruit.
  5. Sprinkle the top lightly with cinnamon.
  6. Cover and cook on HIGH for 2 hours and 30 minutes, until the peach filling is bubbling and the topping looks set.
  7. Remove the lid and let the cobbler stand for 15 minutes. This helps the topping firm up and lets the syrup thicken.
  8. Spoon the warm peach cobbler into bowls. Add a scoop of vanilla ice cream before serving.
