Smiddy Loaf!

A slightly more ambitious recipe but so so worth it!

Ingredients

  • 4oz margarine
  • 1 cup sultanas
  • 1 cup sugar
  • 1 cup water
  • 1 tsp bicarbonate of soda (baking soda)
  • 1 tsp mixed spice
  • 2 eggs, beaten
  • 2 cups self raising flour

Instructions

  1. 1. Place all ingredients except eggs and flour in a saucepan and gently bring to the boil. Boil for 5 minutes then take off the heat.

  2. 2. Allow to cool for 15-20 minutes then beat in eggs and flour and mix until smooth.

  3. 3. Grease two 1lb loaf tins and line with non-stick baking paper. Heat the oven to 180 degrees celsius.

  4. 4. Bake in the oven for 40-45 minutes until a skewer comes out clean.

  5. 5. Leave to cool completely in tin.

  6. slice and spread with butter to serve! Enjoy!
