Savoury Pancakes

Simple and tasty savoury pancakes



  • This is the basic recipe but other ingredients can be added; i'd recommend diced capsicum, chopped spinach or even chopped cashews if you want to add a little something more
  • • 1 cup flour
  • • 1 teaspoon sugar
  • • 2 teaspoons baking powder
  • • ½ teaspoon salt
  • • 1 cup milk
  • • vegetable oil
  • • butter (optional)
  • • 1 large egg
  • • 1 grated zucchini
  • • 1 small diced potato
  • • salt
  • • pepper


1. in a pan, pre-cook potato with oil until soft centred

2. in a bowl, whisk milk, 2 tbsp. Oil and egg

3. add in flour, sugar, baking powder and salt

4. when thoroughly mixed together, add in potato and zucchini

5. sprinkle salt and pepper to taste

6. in oil or butter, fry 3 tbsp. Of mixture in a pan over medium heat

7. cook until pancake surface bubbles and some have burst, then carefully flip and cook for another 1-2 minutes

8. repeat cooking for each pancake until all mixture is used

can be eaten alone or served with greek yoghurt, mint sauce, chutney or sour cream
