Butternut Squash N Red Pepper

Ingredients

  • 1 whole butternut squash peeled deseeded and chopped into rough cubes
  • 1 large onion diced
  • 1 large red pepper chopped
  • 2 cloves garlic crushed
  • 4 chicken oxo cubes
  • salt and pepper to taste
  • 1.7 - 2 litres boiling water

Method

fry squash pepper onion and garlic in a little olive oil for five mins.

add boiling water and stock cubes and a little salt and pepper

simmer for 30 mins

blend in a food processor or use a hand blender

may serve with a dash of cream on the top if desired

    Was looking for a quick and easy soup to make for the family. This is perfect! Boyfriend LOVED it and wants me to make it again tomorrow! Only going to change the amount of water next time, so its a bit easier for the little one to eat and leave a few chunks. Thank you!! =)

    this is not too many stock cubes in this volume of water, it has never been salty

    Way too many stock cubes! I make mine with only 1 stock cube as they can be quite salty
