Chicken Noodle Soup

Great if your missing home cooking



  • Serves 2
  • 1 x skinless bonless chicken breast
  • 900 mls chicken stock (you can get packet liquid stock at 450mls per packet from most supermarkets)
  • 50g Rice Noodles
  • 1 teaspoon chopped ginger root
  • 1 chopped clove garlic
  • 2 spring onions
  • 2 Teaspoons soy sauce


Bring the stock to the boil

Add chicken breast, garlic and ginger

Partially cover and simmer for 20 minutes

After 20 mins remove chicken on to a board and shread into bite size pieces with a fork

Add chicken, spring onions and soy sauce and noodles back to the stock and simmer again for 4-5 minutes or until the noodles are done.

Serve between 2 bowls - tongs are best for getting the noodles out!

    I used less noodles in mine and broke them all up before putting them in the pan so they were easier to eat :) thanks for the recipe :d

    Can you use stock cubes instead of liquid stock, and if so how many?
