Everyday Soup

Cheap, yummy and good for winter!

Ingredients

  • 3 large carrots
  • 3 medium potatoes
  • 1 red onion
  • 2 cloves of garlic
  • 1 tin of tomatoes
  • 500ml of chicken or veg stock
  • as many frozen peas as you like!
  • knob of butter
  • italian herbs
  • cayenne pepper
  • salt and pepper
  • olive oil
  • a splash of worcester sauce (optional)

Method

1. Chop the carrots, potatoes, onion and garlic. Prepare the stock.

2. Heat the oil in a large pan and fry the onions and garlic for about 3 minutes.

3. Turn down the heat and add the butter, carrots, potatoes and the seasoning. Stir all together.

4. Add the tomatoes and stock. Turn up the heat again and cook for 10 minutes.

5. Add the frozen peas and stir.

6. Place in the oven for 10 minutes.

7. Allow to cool for 15 minutes before blending or crushing with a potato masher.

the main ingredients cost about £2 from sainsbury's and makes enough for 4 meals.

    If you grate the carrots and potatoes then you don't really need to blend it at the end. Also it tastes nice with some pumpkin in it.

    There is absolutely no point cooking this is the oven aswel, just leave the whole thing to simmer on the stove for 30mins. No need to cool it before blending it either.
