Grandma's Soup (blender Required)

Thick creamy veg soup, perfect for warming you up, this recipe makes one large pot.

Ingredients

  • 1 1/2 cups of chopped mushrooms
  • 1 large chopped onion
  • 1 chopped leek
  • 1 head of broccoli chopped
  • 5 chopped carrots
  • 5 large potatoes peeled and chopped into four
  • 1 1/2 cup of pouring cream
  • seasoning: shake in salt and pepper at the very end of the method and taste add more or less to your taste.
  • *in the end if you have some left over meat in the fridge, add after blending to bulk for a more filling meal and enjoy with some crusty bread.

Method

Super easy!

1.Place all veg and the potatoes into one large pot and add water to cover 4 inches above the stuff in the pot and leave to boil

2.Come back after a half an hour and check the potatoes with knife (push knife into potato, if slides in easy its cooked, if not leave for another few mins and check regularly)

3. When the stuff is cooked blend that baby up until your happy with the consistency add the salt, pepper and cream, stir and enjoy!

    You can make veggie soup with any surplus or left over veg ( carrots, onions, celery, swede, cabbage etc. ) and a veg or chicken stock cube. A trick i have is to add a sachet of cup-a-soup, vegetable flavour. It is not cheating! The ingredients are mainly thickener and flavouring . Also it is worth buying a cheap stick blender if you make soup often. I got one from morrisons for £8 and it is excellent.
