Lentil And Carrot Soup

Vegi friendly Delicious, Healthy Soup



  • (measurements are using average size coffeemug)
  • 1 mug red lentils
  • tablespoon olive oil
  • 1 small green onion (diced)
  • 2-3 carrots (washed peeled and diced)
  • 1 small potato (as above)
  • 1 veg stock cube
  • mixed herbs (about a pinch)


Wash and drain lentils.

Heat the oil in a large pot and slightly cook the onion, add the potato and carrot and cover while you make up the stock,

Stir the stock, lentils and herbs.

bring to boil and simmer for about 20 mins, til veg is tender

Liquidise and serve
