Mediterranean Tomato Soup

Mediterranean Tomato Soup! Quick , easy and so tasty.



  • Cooking time 30-40 mins
  • 1 large potato
  • 1 can chopped tomatoes
  • 2 medium onions
  • 1 cube of Vegetable stock
  • 3-4 cloves garlic or garlic puree (to taste..)
  • Fresh or dried basil and oregano (optional and add according to taste!
  • Salt and pepper to taste
  • Olive Oil
  • You can also add peppers, chilli, pancetta, chicken etc...


1. Chop potato into small cubes (the smaller the cubes, the quicker they will be to cook) and chop onion

2. Heat oil in the frying pan. Once heated add chopped potatoes and onions. Add garlic.

3. Keep stirring and fry until potatoes become clear and cooked. Add basil and oregano into the pan. (Salt and pepper can be added at this point too)

4. Pour chopped tomatoes, vegetable stock cube and tomato puree into a saucepan. Add potato/onion mixture into the saucepan and stir well.

5. Add boiling water, according to consistency. Bring to the boil, and simmer for 10 minutes.

6. Add mixture into a blender and blend to desired consistency.
