Potato And Leek

Simple and delicious



  • 1 onion, chopped
  • 3 garlic cloves, crushed
  • 2 leeks, white part, washed well
  • 6 potatoes, chopped into cubes, adjust according to size of potatoes
  • 1 vegetable stock cube
  • water
  • salt and pepper
  • oil
  • for the commenter "none", you will also need:
  • large saucepan
  • chopping board
  • sharp knife
  • blender
  • stovetop
  • electricity/gas/fire powered
  • fingers to turn on stovetop


Cook onion and garlic in oil

add chopped leek and stir till a little cooked

throw in the potatoes, then cover with water

let the water boil

throw in the stock cube and some salt and pepper

let simmer for 20 to 30 minutes, or until potato is soft.

let stand to cool slightly, then blend with a stick blender or in batches in a blender.

this is such a lovely winter warming soup. It's one of my favourites to make a big batch.

you can then freeze in serving size portions if desired.

    It is thick, but a runny sort of thick. Very filling.

    It makes however much you want it to make, a large sqaucepan full, enough for maybe 6 serves.

    a blender is pretty much a given when you're a soup maker. And i will post a soup recipe with mention of a blender in the method section. Cheers! :)
