Red Pepper And Tomato Soup

creamy pepper and tomato delight



  • 2 tablespoons of oil
  • 1 onion peeled and sliced
  • 450g/1lb tomatoes take seeds out,chopped
  • 2 red peppers take seeds out ,sliced
  • 600ml/1pint of hot stock
  • 1 teaspoon dried mixed herbs
  • 2 teaspoons of granulated sugar
  • 4-5 teaspoons concentrated tomato or tomato puree
  • 1 tablespoon of lemon juice
  • salt and freshly ground black pepper to season.
  • yoghurt to serve


1. Put oil in a bowl and cook for 1 and a half mins,add onion and sliced pepper and cook fro 6 min. add tomato and stir in the stock, herbs, sugar, tomato puree and lemon juice.cook for further 6 mins, then taste and adjust the seasoning.

2.Remove few slices of pepper from bowl and puree the soup return the reserved pepper slices to the soup and serve topped with a whirl of yoghurt.
