Red Pepper And Tomato Soup

creamy pepper and tomato delight



  • 2 tablespoons of oil
  • 1 onion peeled and sliced
  • 450g/1lb tomatoes take seeds out,chopped
  • 2 red peppers take seeds out ,sliced
  • 600ml/1pint of hot stock
  • 1 teaspoon dried mixed herbs
  • 2 teaspoons of granulated sugar
  • 4-5 teaspoons concentrated tomato or tomato puree
  • 1 tablespoon of lemon juice
  • salt and freshly ground black pepper to season.
  • yoghurt to serve


1. Put oil in a bowl and cook for 1 and a half mins,add onion and sliced pepper and cook fro 6 min. add tomato and stir in the stock, herbs, sugar, tomato puree and lemon juice.cook for further 6 mins, then taste and adjust the seasoning.

2.Remove few slices of pepper from bowl and puree the soup return the reserved pepper slices to the soup and serve topped with a whirl of yoghurt.

    This really does look like a terrific looking recipe and it also looks like it would taste great but you guys don't actually show us how to put it together. What's up with that? Still, I'll try to put it together on my own. Thanks anyways. Trevor @
