Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk
  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour (for gravy)
  • 2 cups milk
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). In a large mixing bowl, combine flour, baking powder, baking soda, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. Stir in the buttermilk until just combined. Turn the dough onto a floured surface and knead gently. Roll out to about 1-inch thick and cut into rounds.
  3. Place the biscuits on a baking sheet and bake for 15-20 minutes or until golden brown.
  4. While the biscuits are baking, cook the sausage in a large skillet over medium heat until browned. Sprinkle in the 1/4 cup of flour and stir well to combine.
  5. Gradually add the milk, stirring constantly until the gravy thickens. Season with salt and pepper to taste.
  6. Once the biscuits are done, split them in half and ladle the sausage gravy over the top before serving.
