Spaghetti omlette

use up leftover pasta (and it’s yum!)

Ingredients
- 2 eggs
- 125g leftover cooked spahetti
- 1-2 tbsp olive oil
- 75g grated mozzarella
- 3-4 cherry tomatoes, quatered
Instructions
Crack eggs in a large mixing bowl and beat
Add pasta with a little salt and pepper and mix well
Heat the oil in a large frying pan (completely cover the bottom)
Put half the pasta in the pan and spread it evenly over the bottom
sprinkle the mozzarella and tomatoes over the top
top with remaining spaghetti and cook until brown on 1 side
flip it over and cook again until brown on other side
