Step 1:

  • peel and boil potatoes for 10-20 minutes, if theyre big hack them into smaller pieces
  • Step 2:

  • once soft enough to cut but not so soft theyre mushy, chop into cubes no larger than 2cm squared
  • Step 3:

  • chuck in frying pan with some salt and oil until browned and a little crispy
  • Step 4:

  • chop up the onion and other veg to similar size
  • Step 5:

  • throw all the veg in a baking tin
  • Step 6:

  • mix the milk and egg like you would for scrambled eggs, then pour over veg
  • Step 7:

  • bake for 15 minutes

  • its yummy cold and hot so great as leftover snack or chop it up and serve it at parties when youre super broke
