2. Place the lamb in a large bowl and mix with the mint, coriander, oregano, garlic, sherry, vinegar and molasses or honey. Season with cumin, all spice, chilli flakes (or powder), salt and pepper then mix well.
3. Shape into 4 burgers.
4. Brush grill pan or bbq with oil. Cook burgers for 5 minutes each side or until well done.
5. Heat a pitta bread briefly on the bbq or grill, serve burgers in pittas with some crumbed feta cheese.
