Ingredients

  • 450g carrots chopped
  • one large onion chopped
  • two cloves of garlic
  • 1.2 litres of vegetable stock
  • 1tbsp ground coriander
  • 1tsp fresh chopped coriander leaves
  • salt and pepper to taste
  • olive oil
  • 1 tbsp butter

Instructions

  1. heat butter and oil in a large pan, add onion and garlic and simmer for 2 mins.

  2. add carrots and simmer for 2 mins.

  3. add ground corriander, season well and simmer for a further 3 mins.

  4. add vegetable stock and simmer for 10-15 mins or until carrots and onions have softened.

  5. once softened take off the heat and using a hand blender or transfering into a blender blitz it all until a thick creamy texture ensuring all the carrots are blended.

  6. transfer the soup into a clean pan.

  7. (add the fresh coriander or more ground if desired)

  8. place back onto the hob until heated through.

  9. should serve about 4 but can be kept for 2 days fresh and can also be frozen.

  10. serve with crusty bread or cheese sandwiches!
