Spicy Mixed Vegetable Soup

Ingredients

  • This recipe cost me around £2.00 to make and makes enough for three meals!
  • 1x onion
  • 1x broccoli head
  • 1x large red bell pepper
  • 1x large leek
  • 2x medium carrots
  • 1x vegetable or chicken stock cube
  • -coconut oil
  • -chilli powder (i used schwartz)
  • -salt and pepper

Instructions

  1. 1-chop vegetables into small pieces

  2. 2-heat saucepan to medium and add coconut oil( you could use vegetable oil)

  3. 3-add onions first

  4. 4-add red bell peppers

  5. 5 add broccoli and leek

  6. 6-put lid on saucepan and then put it on low

  7. 7-sweat vegetables in pan for 2 minutes

  8. 8- add vegetables or chicken stock cube to boiling water in jug, stir and then add to saucepan

  9. 9-add seasoning and chilli powder i used a lot because i love spice but you can add as much as you like

  10. 10- simmer for 10-15 minutes

  11. 11-blend and enjoy!

  12. you can freeze the soup after it has cooled and keep in the freezer for a month ( remember to label and date)
