Step 1:

  • 1-chop vegetables into small pieces
  • Step 2:

  • 2-heat saucepan to medium and add coconut oil( you could use vegetable oil)
  • Step 3:

  • 3-add onions first
  • Step 4:

  • 4-add red bell peppers
  • Step 5:

  • 5 add broccoli and leek
  • Step 6:

  • 6-put lid on saucepan and then put it on low
  • Step 7:

  • 7-sweat vegetables in pan for 2 minutes
  • Step 8:

  • 8- add vegetables or chicken stock cube to boiling water in jug, stir and then add to saucepan
  • Step 9:

  • 9-add seasoning and chilli powder i used a lot because i love spice but you can add as much as you like
  • Step 10:

  • 10- simmer for 10-15 minutes
  • Step 11:

  • 11-blend and enjoy!

  • you can freeze the soup after it has cooled and keep in the freezer for a month ( remember to label and date)
