Step 1:

  • Serves 4: Prep time 10 mins: Cooking time 1hour 10 mins
  • Step 2:

  • 1)Add onion, grated carrot and onion plus chiili powder to a large deep pan
  • Step 3:

  • 2)Add a splash of the veg stock to the pan and cook gently for 5 mins stirring continuously
  • Step 4:

  • 3)Add in drained chopped tomatoes, stir and then add in lentils
  • Step 5:

  • 4)Stir well making sure lentils are distributed evenly throughout mixture
  • Step 6:

  • 5)After a minute or two of stiring add in the stock and leave to boil (turn heat up)
  • Step 7:

  • 6)Once boiling immediately reduce heat to simmer (lowest setting)
  • Step 8:

  • 7)Stir once then cover with lid
  • Step 9:

  • 8)Leave to simmer for 1 hour
  • Step 10:

  • 9)After one hour take the soup off the heat and blend with a blender (hand held/ machine) until smooth
  • Step 11:

  • 10)Ladel soup into 4 bowls and serve with wholemeal bread and season with pepper
