Spicy Ricey Mexican Chicken

A quick cheap and easy mexican meal for one.

Ingredients

  • 1 Chicken Breast (cut into 1cm slices)
  • 1 Packet of mexican style microwave rice
  • 1 tbs of chilli powder
  • 25ml water
  • 1 tbs Oil
  • 1 tbs tomato and chilli sauce.
  • Salt and Pepper
  • Grated Cheese (optional)
  • Soured Cream (optional)
  • Lime Juice (optional)

Instructions

  1. 1 Put Rice in micrwave and cook according to instructions

  2. 2 place chicken in a hot frying pan with the oil and fry for 1-2 minutes turning often.

  3. 3 add chilli powder, salt and pepper and fry for a further 2 minutes.

  4. 4 add the water and turn the chicken, then leave for the water to evaporate (this makes sure the flavouring has evenly coated the chicken and not stuck to different parts)

  5. 5 add the sauce and stir for 30 seconds so that it heats up.

  6. 6 put the rice on a plate and place the chicken on top.

  7. 7 add the grated cheese, soured cream or lime jusice if you wish.

  8. 8 enjoy 🙂
