1) fry the peppers with the onion in a little oil for 5 minutes on a medium heat. Keep stirring them around to make sure they don’t catch.

2) then add the garlic, cherry tomatoes and chorizo.

3) finally add the chopped tomatoes, puree and seasoning and allow to simmer on a low heat for 10 minutes.

4) cook the pasta according to the packet instructions. Once cooked, hold back some of the pasta water in a mug, chuck the pasta into the tomato sauce and add a drizzle of the pasta water to loosen up the sauce. Make sure all the pasta is coated with the sauce and serve with grated cheese, if you like.
