Step 1:

  • 1) fry the peppers with the onion in a little oil for 5 minutes on a medium heat. Keep stirring them around to make sure they don’t catch.
  • Step 2:

  • 2) then add the garlic, cherry tomatoes and chorizo.
  • Step 3:

  • 3) finally add the chopped tomatoes, puree and seasoning and allow to simmer on a low heat for 10 minutes.
  • Step 4:

  • 4) cook the pasta according to the packet instructions. Once cooked, hold back some of the pasta water in a mug, chuck the pasta into the tomato sauce and add a drizzle of the pasta water to loosen up the sauce. Make sure all the pasta is coated with the sauce and serve with grated cheese, if you like.
