Spicy Scrambled Eggs/egg Bhurji

Scrambled eggs with oomph!

Ingredients

  • 1. 2 eggs or 1 large egg
  • 2. Quarter of a pepper cut into slices/bits (any colour)
  • 3. A quarter of an onion finely chopped
  • 4. A quarter of a tomato chopped or a few spoons of the tinned stuff.
  • 5. A little piece of ginger and garlic finely chopped/grated
  • 6. Cumin seeds, half a teaspoon
  • 7. Chilli powder, a pinch (or some fresh green chilli)
  • 8. Coriander powder, enough to suit your tastes
  • 9. Garam masala, enough to suit your tastes

Instructions

  1. 1. Heat oil in a frying pan, add cumin seeds

  2. 2. Once seeds splutter add onion and pepper and cook until soft (also add green chilli if using)

  3. 3. Add ginger, garlic and tomato and stir about for a couple of minutes

  4. 4. Add all the spices and stir about for a bit

  5. 5. Add eggs and keep stirring about until it is scrambled to your liking.

  6. goes well with toast or maybe some plain parathas. Or just on it’s own.

  7. (note: adding salt is all about preference, i rarely do so might miss it out. Add it to your liking.)
